Why does my dog roll in cow poo?

I have 3 border collies and at some point they have all rolled in cow poo when the cows are in the field next to ours. They specifically get the poo on one or both sides of their necks. Why oh why?

HAHAH! My dogs do the same thing with goose and fox poop. They like it because it smells bad! Its gross but its not an abnormal behavior
